Hmm..first off, who is paying for all of the supplies & stuff? Is it you or your father & uncle? What harm is it in asking them if you are the one paying for the stuff? It isn't like you are planning on moving out of the house in a year or so is it? To my understanding you are planning on living in this house for a while aren't you?

I honestly love the honey colored wood of the trim & cabinets. If you can't change the counter tops then you might think about painting the walls a light pink or cream & then stenciling a style on them in a green that matches the counter tops to bring everything together. I never suggest white in a kitchen, but is also a option. I hate white in a house, I re-painted my ceilings to a soft dove gray to get rid of the white. I don't know why, but I just can't stand white paint.

For the lights, I would replace the one by the window for sure with a hanging one cause at night it will be nice. But your ceiling fan will be helpful with your utility bills. Does the house have A/C? The ceiling fan will have help circulate the air throughout the house. My trailer has ceiling fans & I don't know how I ever lived without them before, lol. I just wish my parent's house would have them.

Again these are my suggestions & nothing more.
